Chicken Thigh, Onion & Pineapple Tray Bake

Serves 4

Pre-heat oven to 200ºC



12 skinless, boneless chicken thighs

1 large onion, chopped into chunks

3 celery sticks, sliced into 2cm pieces

2 cloves garlic, finely diced

4 spring onions, sliced finely

Half a large pineapple, cut into 2 cm thick chucks


Place all above ingredients into a deep baking tray and in a jug, mix:

A bunch of coriander stalks, finely chopped

2 tbsp tomato paste

2 tbsp smoked paprika

2 tsps ground black pepper

2 tsps onion granules

1 tsp sea salt flakes

2 tbsp runny honey

400ml water


Mix well and pour over the contents of the tray.  Put onto middle shelf of oven and cook for 45 mins until sticky, and lightly charred.

Serve with rice, potatoes or a crisp salad.  Would also be fantastic if left to cool and stuffed into sandwiches!
