The Ultimate Bolognese

This is the meal I make for my family when nobody is sure what to eat or it’s raining outside or if everybody is REALLY hungry!  I love to make it in the morning when going out for the day as the flavour just keeps developing over time and it can be served up straight away when you get in.  It freezes well and can be served with anything, not just GF pasta.  Those wanting to avoid heavy meals at night or stodgy carbs can serve it with a spinach salad or some crunchy sweet romaine lettuce leaf ‘tacos’.

So versatile, so rich and so delicious – I’m proud to be sharing this classic family favourite with you.

 

Serves 4-6

RECIPE:

 

Into a large, deep saucepan with a lid, add:

150g smoked bacon lardons (optional for those who don’t eat pork or wish a lower calorie version of the recipe)

Fry until crisp and then add:

1 kg good quality, lean steak mince

Cook it off until browned and lightly charred in places for added flavour.  Then add:

3 large cloves of finely chopped garlic

1 large red onion, finely diced

2 sticks of celery, finely chopped

1 large carrot, finely diced

3 large bay leaves

2 beef stock pots

Allow to cook for 3-4 mins until onions are softened slightly, stirring regularly. Add:

Large pinch sea salt

1 tsp ground black pepper

1 tsp dried oregano

1 tsp dried mixed Italian herbs

1 tsp dried basil

2 tsps onion granules

2 tsps garlic granules

250ml good red wine

Stir ingredients thoroughly and cook for 5 mins until most of the wine has cooked out. Then add:

3 tbsp tomato paste

700g passata

2 tbsp runny honey

1 litre spring water

Stir thoroughly, cover and simmer on a low heat for 2-3 hours, adding water a cupful at a time if too thick.

 

Either serve then and there or leave covered to cool and re-heat later.
